Historical note:
This vine comes from Bordeaux region too, but the exact
time of its first Friulan cultivation is unknown,
although it was probably tilled here before Cabernet
Franc.
-
Features:
From Cabernet Sauvignon you get a delightful table wine,
of intense rubin red colour, turning to violet when aged.
Its bouquet is lightly herbaceous, with raspberry and
blueberry hints when still young. A strong, full and
tasty body makes it good for a long ageing, and
refinement in barrels makes it the king of red wines. To
be served preferably with: cold meats of the Grand
Cuisine, roast meats (any kind), and it is very nice
with poultry and mature cheese as well. To be served at
16-18 °C.
-
Total souring:
5.50 g/l total extract: 25.40 g/l durability: 2 years (dependent
on harvest season) rest sugar: 3.00 g/l
